Betty Crocker Chocolate Chip Cookie

2/3 cup shortening
2/3 cup butter
1 cup sugar
1 cup dark brown sugar, packed
2 large eggs
2 teaspoons vanilla
3 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 (12 ounce) package chocolate chips
1/2 cup walnuts, chopped

Cream shortening, butter, and sugars in large mixing bowl; blend in eggs and vanilla. Combine dry ingredients and add to butter mixture. Mix until well blended. Stir in chocolate chips and nuts. Drop by rounded teaspoon onto ungreased baking sheets. Bake at 375° for 7-10 minutes until golden brown.

Cookie Salad

2 big packages of instant vanilla pudding
2 cups of buttermilk*
1 large tub of Cool Whip
1 can mandarin oranges, drained
1 package shortbread cookies

Mix ingredients together except the cookies. Crush cookies into pieces and mix in just before serving. Sometimes I add other fruit, whatever I have on hand.

*Hint if you don't have buttermilk:
To each 1 cup plain milk, add 2-3 teaspoon lemon juice. Let sit for 2 minutes then add to salad.

(A potluck favorite that works as a side dish or as dessert.)

Side Dish Recipes
Cheese Burger Soup

½ pound hamburger
¾ c chopped onions
¾ c grated carrots
¾ c diced celery
1 teaspoon basil
1 teaspoon parsley
3 cups chicken broth
4 cups chopped potatoes
3 Tablespoon margarine
¼ cup flour
2 c cheese, shredded or diced
1-1/2 cups milk
¼ to ½ teaspoon pepper

Brown hamburger and drain off fat. Add onions, carrots, celery, basil and parsley. Saute until onions are transparent. Add broth and potatoes. Bring to a boil. Reduce heat. Cover and simmer 12 to 15 minutes or until potatoes are tender. In a small pan, melt 3 TB margarine. Add flour. Cook until bubbly. Add to soup. Bring to a boil. Cook and stir 2 minutes. Reduce to low. Add cheese, milk and pepper. Cook until cheese melts. Serve hot.

Squires' Salsa

Three bottles of whole tomatoes (drained)
1 can olives (sliced)
2 green peppers chopped
1 red onion chopped
2 jalepenos finely chopped
Cilantro to taste chopped
Few shakes garlic powder
1Tablespoon apple cider vinegar
1Tablespoon oil
Salt to taste (my bottled tomatoes are salty enough)

Mix and eat immediately or refrigerate until ready to eat.

Salt Body Scrub

1/2 cup sweet oil (almond, grapeseed, olive or rice bran oil are all good choices)
1 cup sea salt (altho salt from the local grocery store works just as well for less)
5 drops essential oil

Combine oil and salt in bowl and mix well. Add oil and combine well. To use, apply to dry skin using circular strokes to exfoliate the skin. Best to use inside of tub or shower to avoid making mess. Shower off or follow with warm bath. It is suprising how smooth it makes your skin feel. Don't use if you have any cuts or scrapes in your skin.

Variation: Use sugar instead of salt, for gentler scrub.

I saw this type of body scrub in the mall for an astronomical price as the salt was from the Dead Sea. This recipe works just as well.

Weird, but Cool Recipes
Banana Bread
--Karen Jacobson, McKay Library—BYUI, Rexburg

1 1/4 cup sugar
2 eggs
1/4 cup shortening
2 ripe bananas
Cream the above ingredients together.

Then add:
1/4 cup milk
1 teaspoon vanilla
1 teaspoon baking soda
1 cup chopped nuts (optional)
2 cup flour
½ teaspoon salt

Mix and pour in greased bread pans. Bake at 350* for 40 minutes until light brown.
